Walnuts are an amazing powerhouse of a nut! Walnuts have long been regarded a brain food, containing essential fatty acids such as alpha-linolenic acid, and omega fatty acids necessary for proper brain function. Coincidentally, the surface structure has an appearance like that of a brain. Rich in Vitamins C, B and E, they also contain a variety of essential minerals such as calcium, iron, magnesium, potassium and zinc.
Soaking walnuts (germination) before eating them increases nutrition absorption in the body, while eliminating the enzyme inhibitors that are difficult to digest. Without these inhibitors, our body’s own enzymes are more effective at helping us absorb the nut’s nutrients.
`Eat them straight out of the bag for a portable, energy rich snack, or try them toasted and diced over yogurt, cereal, avocado toast or a bagel with cream cheese. Walnuts also make a wonderfully protein packed and crunchy addition to any salad!
