Chia's name is derived from the Mayan word meaning “strength.” They are a superfood because they have a high amount of nutrients and low calories. Chia seeds are a good source of fiber, protein (about 14%), are extremely hydrating when soaked, and they are rich in omega-3 fatty acids. They are perfect, natural egg substitutes and are used to thicken sauces. Since they absorb about 12 times their weight with water or fat, they can dehydrate you during digestion if they are not pre-soaked. Chia makes an excellent pudding, addition to a salad, to cereal, or in juice or a smoothie. A recommended amount is about 3 tablespoons of chia seeds per day.
How to Soak: Mix chia seeds in a 1:10 ratio chia to water. That’s about 1.5 tablespoons chia seeds in one cup of water. It does not have to be exact, but you do want it to gel all the way and not be too watery or have it in clumps. Then let them sit for about 30 minutes to two hours.
