Chia's name is derived from the Mayan word that means “strength.” They are considered a superfood because they deliver a high amount of nutrients but are low in calories. Chia seeds are a wonderful source of fiber, are about 14% protein, are extremely hydrating when soaked, and they are high in omega-3 fatty acids. They are used as egg substitutes and to thicken sauces, because they have the unique ability to absorb water and fat, about 12 times their weight. They can also absorb water from your body during digestion if you do not soak them. They are excellent as a chia pudding, or added to a salad, to cereal, or in your juice or a smoothie. A recommended amount is about 3 tablespoons of chia seeds per day.
How to Soak: To soak chia seeds, simply mix them in a 1:10 ratio chia to water. That’s about 1.5 tablespoons chia seeds in one cup of water. It does not have to be exact, but you do want it to gel all the way and not be too watery or have it in clumps. Then let them sit for about 30 minutes to two hours.
