Lentils are an ancient bean that date back some 9,000 years ago. They are inexpensive and high in protein, which make them a great health food for a tight a budget. These lentils can be sprouted and added to a salad for additional nutrition. Soak in water overnight, rinse in the morning, drain, and leave on the counter for 24 hours, rinsing every 10 hours or so. Once they grow a tail, cover them and store them in the fridge.
