Agave nectar is generally produced from the Blue Agaves that grow in the rich volcanic soils of Southern Mexico. Agaves are succulent plants similar to Aloe Vera.
It has many health benefits over refined sugar. The Aztecs used a mixture of agave nectar and salt as a dressing for wounds and a balm for skin infections.
One of the best properties of agave nectar is its low glycemic profile. Its sweetness comes from a complex form of fructose called inulin. Fructose occurs naturally in fruits and vegetables. Our agave is processed at low temperatures so the enzymes are intact.
