Agave nectar is generally produced from the Blue Agaves that grow in the rich volcanic soils of Southern Mexico. Agaves are succulent plants similar to Aloe Vera.

One of the best properties of agave nectar is its low glycemic profile. Its sweetness comes from a complex form of fructose called inulin. Fructose occurs naturally in fruits and vegetables.
