Perfect Steel Cut Oats
Ingredients:
3 cups water
1 cup of your favorite type of milk: dairy, almond, coconut, pistachio. . .whatever tickles your taste buds!
1 tablespoon coconut oil or unsalted butter
1 cup Steel-Cut Oats
1/4 tsp salt
Optional Additions:
Cinnamon, dried fruits, chopped dates, toasted nuts, lemon zest, and vanilla are all delicious ways to customize your oats!
Instructions:
1.In a large saucepan, combine the water and milk. Bring to a summer over medium heat. Once simmering, add the oats and cook, stirring occasionally, for about 2 minutes
2.Stir in the oats and reduce heat to medium low, adjusting the heat as needed to keep the mixture at a gentle simmer. Cook for about 20 minutes, stirring occasionally, until the mixture is very thick.
3. Stir in salt. Continue to simmer, stirring occasionally and reducing heat as needed until almost all of the liquid is absorbed. This should take around 10 minutes. If you have doubled the recipe the oats may require an additional 5 minutes of cooking time. The oatmeal should be very creamy by the time it is done.
4. Remove from heat and stir in any of the optional additions you would like, such as nuts, spices or dried fruit. Let rest for 5 minutes before serving. Top with fresh fruit if desired. Let any remaining oatmeal cool before covering and refrigerating for future use.
