Tarragon has a distinctive light flavor that makes it a natural compliment to fish, rice dishes, or the perfect Bearnaise sauce. Tarragon is also called “Little Dragon”, and its medicinal uses go back centuries. Tarragon essential oil is frequently used for
its healing properties.
This is a remarkably easy and fast recipe for this classic luxurious sauce. If you prefer not to use a microwave, place a glass bowl over a pan of simmering water to heat gently. Wonderful on steak, chicken, vegetables, fish, and poached eggs.
Ingredients:
1/4 cup butter
1 tsp minced onions
1 tbsp white wine vinager
1 egg yolks, beaten
2 tbsp heavy cream
1 1/2 tsp lemon juice
1 tsp tarragon
1 tsp chopped fresh parsley
1/4 tsp salt
1 pinch dry mustard
1 pinch cayenne pepper
Directions
Step 1:
Place butter in medium glass bowl and melt in the microwave for about 30 seconds Whisk in onion, white wine vinegar, egg yolks, heavy cream, and lemon juice. Season with tarragon, parsley, salt, mustard powder and cayenne pepper, blend well.
Step 2
Return to microwave, and cook for 1 1/2 minutes or until thickened, stirring until smooth every 20-30 seconds.
