Mung beans are native to South America. They date back as early as 1500 BC. Mung Beans can be consumed cooked or sprouted. To sprout them, soak in water overnight, rinse in the morning, drain and leave on the counter for 24 hours, rinsing every 10 hours or so. Then store them in the refrigerator until you are ready to use the sprouts.
