This bean is a main ingredient of the popular health food hummus. They are also great added to soups and salads to provide extra fiber and protein. It is best to soak them overnight before cooking.
Super Easy Hummus
Ingredients:
2 cups cooked garbanzo beans (save a little of the leftover cooking water, about 1/2 a cup will be plenty)
1 tablespoon lemon juice
1 tablespoon olive oil
1 clove of garlic, crushed
1/2 teaspoon ground cumin
1/2 teaspoon salt
2 drops sesame oil
Directions:
Blend garbanzo beans, lemon juice, olive oil, garlic, cumin, salt, and sesame oil in a food processor; add leftover cooking water slowly to the mixture until it blends to the desired consistency.
Enjoy on chips, vegetables, pita bread, or in wraps and sandwiches!
Tip: Allow the flavors to blend several hours before serving for the idea mixture of flavors
